Lovage (Levisticum officinale) is a large, hardy perennial often compared to celery due to its similar but much stronger aroma and flavour. This plant, which can live for 6 to 7 years, typically reaches an impressive height, and its leaves, roots, flowers, and seeds are all edible. Once well-established, a single lovage plant can easily meet the culinary needs of several people. It prefers sunny, well-drained soils and is very low-maintenance.
Medicinal and Culinary Uses
The leaves, roots, and seeds of lovage are diuretic, carminative, digestive, expectorant, and antiseptic. Used in herbal infusions, the plant promotes the elimination of fluids, making it a natural remedy for water retention and urinary issues. Lovage is also known for its digestive effects, helping to relieve bloating and gas. Due to its expectorant properties, it is sometimes used to ease respiratory conditions. Its leaves and roots are also rich in vitamin C, adding to its general health benefits. In cooking, a small amount of lovage is enough to flavour sauces, soups, stews, or salads. Its flowers and roots can be eaten raw or cooked, while the seeds, with a taste similar to celery, are used as a condiment.
Ecological Roles
Lovage is highly attractive to pollinators, especially bees, thanks to its nectar-rich flowers. In gardens, it promotes biodiversity and supports beneficial insect populations. Due to its large size and abundant production of leaves and seeds, lovage is an excellent addition to ecological and vegetable gardens, providing culinary, medicinal, and ecological benefits with minimal care.
