Quebec Dehydrated Chanterelles
With their beautiful orange colour, chanterelles are certainly among the best known and most appreciated forest mushrooms. Although they are not very selective about where they grow and are relatively common, they nevertheless remain a choice delicacy. Their flavour recalls apricots and orange and appeals to all palates, from seasoned enthusiasts to those making their first discoveries in the world of mushrooms.

Omelettes, quiches, muffins, creamy sauces, chicken with chanterelles, there is no limit to how you can use these delicious mushrooms other than your imagination!
Rehydrate the mushrooms in a liquid (water, broth, milk, wine, etc.) until they are fully plumped (the time varies depending on whether the liquid is hot or cold), then incorporate them into your recipe. Remember to save the rehydration liquid, taking care to strain it; it is full of rich mushroom flavour. If your recipe already includes liquid, there is no need to rehydrate the mushrooms beforehand.
Chanterelles can be used whole, cut into small pieces with scissors, crumbled, or ground into powder using a food processor.

Even the most experienced foragers are impressed when they come upon a beautiful patch of chanterelles. It is always a tremendous gift when nature offers us abundant harvests, as sometimes happens with this mushroom.
The chanterelles are hand-harvested in Quebec and carefully dried before being packaged, so that you can enjoy their exquisite fruity aroma all year round.
